Kurt Zdesar, the visionary founder of Chotto Matte, has transformed the culinary scene with his innovative blend of Japanese and Peruvian cuisine. 

It started with an unwavering desire to create a new, exciting, and accessible fine dining experience, so Zdesar embarked on a culinary expedition that took him from Japan to Peru. After meeting with local Chefs and studying traditional techniques, he set his heart on introducing the world to the exquisite flavours of Nikkei cuisine.

Zdesar’s entrepreneurial spirit and commitment to quality propelled Chotto Matte to global acclaim, with a presence in cities like London Soho and Marylebone, Miami, Toronto, Doha, and San Francisco.
